HERE is something different for Christmas, an oyster recipe given to me by my old friend Margaret Woods.

Mambo Oyster Soup
Ingredients:
– 2 dozen oysters
– 2 tablespoons of cornflour
– 60gm butter
– Half a litre of milk
– Lemon pepper
– Fresh parsley
– 1 cup of cream
Method:
Melt butter in a saucepan.
Add cornflour and milk, stirring constantly.
Add parsley, cream and oysters.
Serve with fresh damper.
